Quick and Easy Salmon with Lemon Dill Sauce

Okay, by now you see a trend in my cooking or lack thereof!   Everything I make has to be quick and easy!

But first!  Today I started my day much like I ended it yesterday!

Horizontal with my heating pad, full blast!


I knew I was not going to make it to work today, so I just stayed in bed for as long as I could stand it.  I ended up going out and about a little later, but I didn’t travel too far!  LOL.. I will leave out the specifics!


But let’s talk Salmon.

Here’s a little background.  I’m from the Pacific Northwest.  You might even say, I am a Salmon Snob!  So trust me okay, seriously trust me on this.

How would you like to throw a salmon dinner together in about SIX MINUTES?  That’s it.  Six minutes.

Here’s what you do:

Take a nice big, thick hunk of salmon or two and put it on a small plate. It can have skin or not, it doesn’t matter.  If you do it with skin, it just comes out oilier and salmon oil is good for you anyway.

So.. put it on a plate and squeeze some lemon on it generously.  Then sprinkle some lemon pepper and salt on it as well.

Now this is key. Put some plastic wrap on it VERY TIGHTLY.  It will act as a steamer.  Then put it in the microwave for about 5 minutes.  Don’t touch it!


I always just leave the lemon it in too.

In the meantime, cook your veggie.  I opted for frozen broccoli, something about this combo screams healthy to me!


I also prepared my kids most fave.  Instant mashed potatoes.  I know right?  She likes them better then real potatoes!


Fine by me baby!  FAST

Check the Salmon.  It is done when you poke it with your finger and it doesn’t bounce back too much.  Remove the wrap and plate it up.  It will be hot so be careful.

It is so flakey and flavorful.


My kid cleans her plate EVERY TIME!

I know, Microwaved salmon sounds yucky, but it is far from it.  You can cook other fish this way, just not as long.

Try it.


Well, here I am again!


Lying here hating my noisy, cranky tummy!  I may have overdone it a bit today.

But at least I didn’t kill myself cooking all day!  This is one FAST FOOD!


Oh.. I was going to tell you about the letter I got from the trustee stating that she is withdrawing her objections!  I wonder what she objected to in the first place!

That has got to be a good sign though!  Maybe things will move along faster now?

You know me, I love things fast and easy!

  1. That sounds awesome – I am going to try this for sure! I like quick and easy too, I’m just not very good at it, LOL. I always make the boxed mashed potatoes too. I think they taste better than the scratch one’s I’ve made. Hope you are feeling better!
