Parmesan – Garlic and Olive Oil

Did I get your attention?

Well, this recipe got my attention the other day and I knew that I was going to make it this week!

Now, I am not fancy schmancy and as you know by now, my ingredients are from my pantry!  I think it works anyway, maybe even better because its meltier!  Is that a word?

So here we go, Parmesan – Garlic Chicken with Roasted Potato Wedges!


My potatoes were small, so I used them all up!


Wash and slice them in half and then in thirds, drizzle with olive oil, mix and put on a sprayed baking sheet.
Add salt and pepper:

I also added some of this.  My kid loves this stuff.  The food blogger put Parm on the potatoes when they were done so I did both!


Put them in the oven for 15 minutes on 400.

Now start on the chicken.  Get out the ingredients that you will mix up for the topping, eyeball it, I used 1/4 cup parm, a couple teaspoons garlic out of a jar and a splash of olive oil –  mix it up good.


I pound my chicken!  That always cracks me up, when I type that.  LOL


Place it on a baking sheet and drizzle olive oil on it.


Then add the topping and salt and pepper, Um, I could have trimmed this a little better!


Oh, don’t forget to turn the potatoes and then add the chicken to the oven.


Let that cook for another 20 minutes.  I love that the timing is perfect and that it cooks in one oven on one temp!!!  Major bonus!

It comes out wonderful and juicy, even the kid loves it and she is sick of chicken!


Plate it up and add some ketchup and a veggie and you are good to go!
