Gone with the Wind Fabulous!


I  love Sundays for lots of reasons, but most of all,  I get a do-over on my health journey.  What that means is that my new week starts today and if I haven’t been so good last week, well, I start over. 


Still on track, but there are moments that can derail anybody.  Keeping the goal means staying on top of it.

Got my walk on this morning, it was gorgeous!  There must have been at least 100 passerby’s!

I pass this on one of the paths, I just had to show you!  Gone with the Wind Fabulous, doesn’t have to be expensive, it can be Eye Candy!



I’m also on goal for the 52 Week Challenge. Here is my contribution to that savings plan this week:


A whopping $9.00 bucks today! 


Not long ago I saw this on Pinterest but it is way to hot here to make it today!


Preheat oven 375.

  • 2 tbsp olive oil (divided)
  • 1 large sweet yellow onion cut in half and sliced
  • 2 cloves of garlic, minced
  • 1-2 russet potatoes, unpeeled
  • 1 zucchini
  • 1 yellow squash
  • 3 large Roma tomatoes
  • Sea salt, freshly cracked black pepper, to taste
  • Dried thyme, to taste
  • 1/2 cup of grated Parmesan cheese


    Cover the dish with tin foil and bake for 35 minutes, or until the potatoes are tender. Uncover and sprinkle the Parmesan cheese on top and bake for another 25-30 minutes or until browned.

    I cannot wait to make that.

    I bought the veggies last week and thought I better make it.  But turning on the oven is just not something I want to do today. So I’ll make it another time, for now, I’ll use the stove top and microwave this week!
