Veggie Swirl without the Swirl

I had time to make this… only I didn’t make it the way the original recipe suggests.  In a Swirl.


See?  I used a long, rectangle baking dish instead of a round one, but hey, I have learned that you make do!

Here’s what I did.

Grilled some onion with some oil and a bit of butter and then add a little garlic and then put that in the bottom of the baking dish.


Cut up your veggies:



Once you layer them the best way you can, sprinkle with salt, pepper and Thyme.  I only had ground Thyme, but hey, again, use what you got!  Pretty!


Cover with foil and bake until potatoes are soft, about 30 minutes.  Then uncover and sprinkle with Parm!


Leave uncovered for another 20-30 minutes until browner.




I added some butter and can I just say, I went back for seconds and can.not.wait until dinner tonight to have more!

The bottom layer of onion and garlic make it!  The Thyme just finishes it perfectly!
