As promised, here is how I whip up a protein packed navy bean soup.
So cheap, so nutritious and so yummy!
Break open the French bread and creamy butter for this baby!
All if the ingredients came from the 99 cent store, except for the meat. I chose to use what I had on hand, a pretty darn healthy one at that!
I got that on sale and its been in my freezer, so I decided to use it and it really gave the soup a nice Smokey flavor!
Here are all the ingredients.
Last night I did a quick soak on the beans, per the package instructions, but then I went ahead and soaked them all night in some fresh water. Just trying to get them really tender.
Here is a pretty simple recipe. The way I make it and serve it gives you way more than just six servings!
I added the rinsed beans to the pot then I add 3 cans of broth and one can of water. I never follow instructions to a tee unless I am baking then I try to.
Then I added the rest of the ingredients.
Stir it up, bring it to a rolling boil and then turn it down and simmer for 2 hours.
When it’s done, I only blend up about half of it.
It makes it creamy, yet there are still some whole beans!
I love this soup.
On a side note. When I make soup, I usually always use the carrot, onion and celery veggie starter. Then I have a lot of celery left over.
I don’t eat raw celery, I just don’t like it. There are not many things I don’t like, but raw celery is one of them.
So I chop it up and bag it.
Then throw it in the freezer and now I have enough for at least 2 or 3 more soups! And fall is right around the corner.
On another note.
I can’t do the 52 week challenge this week, but I did remember to write my IOU for next week if I can!
