Oven Baked Zucchini

Hello!  I love to share good recipes with you.

And this is a good recipe.


I changed it up and only used one whole egg and one egg white.  I kept adding more bread crumbs to make it cover as well.

I also wonder if parmesan in the green can would work better, but I hate to use it.


Wash and peel the zucchini like a cucumber.  I do this because I don’t eat too many peelings because of sensitivities.  TMI?

Slice them up and get the production line going.


First into the egg wash:  (Oh.. cut on a diagonal to get more surface).


Then the parm/bread coating:


Place on a sprayed cookie sheet and into the oven!


These would be really good with Ranch dressing or Marinara.

I eat them plain as a side to my dinner.


I did what the recipe suggested, I turned on the broiler for a few minutes at the end to brown the top.

The bottom already had a pretty good crust going, so no need to flip!

All you need to do is buy zucchini because everything else is a staple most likely.

I have two huge spaghetti squash that I need to cook up!

Hmmmm… what do do.. maybe use in a casserole for a change of pace.
