Winter Squash

Hello! We finally have cooler weather this week! Thankfully! I was beginning to feel like a cracked, dry desert.

When its cold I love to eat winter food. Nothing says winter to me like squash, soups, chili, etc.

I plan on making chicken soup in the next few days. Looking forward to that. Won’t be making chili anytime soon!

In the meantime, I am loving Acorn Squash. No oven allowed, cause I hate my oven.

I just cut it in half with a chain saw (JK) poke some holes in it, sprinkle water on it and wrap it in plastic wrap. Zap it for 4 – 6 minutes depending on the size.


This was a monster, but I brought more than enough toppings to put on it.


It is so easy, fast and cheap right now. Not diet friendly this way though. I usually put maple syrup on it!


Just a quick idea for lunch.

In other news I brought my clothes for step class tonight! Scared! First time in so long, I am going to be that old lady in the back looking confused and sweaty! 🙂
